Plum Pie

Today was the first day of Fall! And of course, I thought of pie. I mean, who doesn't? We had some xtra plums lying around, so I thought, let's bake a pie! If you want to learn how to make this plum pie, please continue reading.

 

PIE CRUST: (not flaky)

- 2 1/4 cup of flour

- 1 tablespoon of sugar

- 1 teaspoon of salt

- 3/4 cup of room temp. butter

- 2/3 cup of cold water

PLUM FILLING:

- 2 pounds of fresh plumps, cut into quarters

- 1 cup of sugar

- 1/4 cup of cornstarch

- 2 teaspoons of vanilla extract

 

INSTRUCTIONS:

- Pre-heat oven to 375 degrees Fahrenheit

- In a bowl of a stand mixer, add your flour with sugar and salt, mix.

- Take a lemon peeler, and peel your butter into the flour mixture. It helps incorporate better then cutting the butter into chunks. Mix it with your hands until it feels like soft sand

- Take your bowl of a stand mixer, and attach the hook paddle and start on medium, slowly add in your cold water until the dough starts to form into a ball

- Take your dough and wrap it in plastic wrap and put it in the fridge for about half an hour

- While the doughs cooling, let's make the plum filling

- Take your plums and add in your sugar, cornstarch and vanilla extract until well combined

- After your dough has cooled, take a non-stick spray and spray your pie pan

- Cut your dough into two sections and flour your surface

-Take half of the dough, and roll it into a circle, make it thin, but not too thin

- Take your lemon peeler and peel some lemon onto the bottom of the dough

- Add in the plum filing

- Now take the other half of the dough, and roll it into a thin circle

- Put it onto of your plum mixture. There will be extra on the sides, cut them off

-Design your pie in any way you want. I decided to make two small leaves out of the extra pie crust :) Don't forget to take a fork and poke gently into the crust, so that the pie could let out some steam

- Bake for 45 minutes, or until the pie is golden! Enjoy with some vanilla ice cream if you wish :)
