Southern Peach Cobbler

We recently bought a cast iron skillet, and there are tons of things you can do with it! I love the fact that you can use it in an oven. My dad just bought a ton of peaches, and I thought of peach cobbler immediately, and why not make it in a cast iron skillet? The recipe is super simple, yet oh so delicious!

INGREDIENTS:
5 large peaches, peeled and cut into thin slices
1/4 cup of sugar
1/4 cup of brown sugar
1/4 teaspoon of cinnamon
1/4 teaspoon of nutmeg
2 teaspoons of cornstarch (or flour)
1 teaspoon of lemon juice
INGREDIENTS FOR COBBLER TOPPING:
2 cups of all purpose flour
1/2 cup of sugar
1/2 cup of brown sugar
2 teaspoons of baking powder
1 teaspoon of salt
12 tablespoons of butter, cut into cubes
1/2 cup of boiling water
3 tablespoons of sugar, sprinkled on top of cobbler
DIRECTIONS:
Pre heat oven to 400 degrees Fahrenheit
butter the cast iron skillet, or the pan that you are using
peel and cut peaches into thin slices and place in a bowl
add the sugars, cinnamon, nutmeg, cornstarch, and lemon juice
place the peaches into the skillet, and bake for 10 minutes
while the peaches are baking, prepare the topping
take your flour and add in the salt, baking powder, and sugars.
Add in your butter, and combine it with the flour with a fork, until all blended together well and it feels like soft sand
add in the boiling water and mix it together until well combined. The dough will be thick, but easy to spread
once the peaches are done baking, add the cobbler dough and make sure it covers everything well
sprinkle the sugar on top, and bake for 30 minutes. You're whole house will smell like a bakery!
serve after 5 minutes and enjoy with a scoop of vanilla ice cream
