It was a cold, rainy day. I had my cup of warm pumpkin coffee beside me, and all was good. Then I remembered, we have a huge basket of apples. So, obviously that led me to make some apple pie. The amazing auroma of nutmeg and cinnamon quickly filled the entire household. Now, let's get to making some delicious apple pie!

INGREDIENTS FOR PIE CRUST:
- 2 1/2 cups of all purpose flour
-1 tablespoon of sugar
-1 teaspoon of salt
-1 cup of unsalted butter, cut into cubes
-1/2 cup of cold water
INGREDIENTS FOR PIE FILLING:
-7 apples ( I used two different types, Granny Smith and Fuji)
-1/2 cup of butter
-3 tablespoons of all purpose flour
-1/4 cup of water
-1 cup of white sugar
-1 full tablespoon of cinnamon
-1/4 tablespoon of nutmeg
-1 tsp of vanilla extract
*Pre-heat oven to 425 degrees Fahrenheit
DIRECTIONS FOR PIE CRUST:
- Combine the flour, sugar, and salt
- Add in the cubed butter and toss them around, making sure they are all coated
- Take a fork and mix it together, it should feel like soft sand
- Add in the cold water and then wrap the dough in a plastic wrap and put it in the freezer for ten minutes
- Take out the dough, and cut it in half, one half for the bottom and the other for the top
-Take one half of the dough on a floured surface, and roll into a flat circle to your desired size and thickness. Do the same for the other half
- Take a pie pan and spray with non stick spray and put one half of your pie crust on the bottom. Make sure to get the dough all the way up the sides
DIRECTIONS FOR PIE FILLING:
-Slice and seed your apples to desired size
-In a saucepan, melt your butter over medium heat
-Add the your apples
-Then add in your vanilla, cinnamon, nutmeg, and sugar. Mix until incorporated
-Add in your water and flour, making the sauce into a slightly thick consistency
-Lower to a simmer and cook for a good minute, making sure that the apples are soft enough
-Take off of heat, and add into your pie pan.

-Add your top crust and we're ready to bake!
- Bake the pie for 40 minutes with aluminum foil on top. When the 40 minutes are up, uncover the pie and let it bake for 10 minutes, to ensure you get that golden brown topping
-Let it cool down for a good few minutes, and enjoy!
*You may also add sugar to the top, but I forgot to do that this time*
