Madeleine

Delicious and soft French cookies. I absolutely love Madeleines! They became my perfect, favorite little treat. They go perfectly with coffee and tea. You will need a Madeleine baking pan (I got mine from Bed, Bath and Beyond) or you could simply use a mini cupcake pan. Let's get started!
INGREDIENTS:
-2 eggs (I like to leave them in a cup of warm water to get them to room temperature)
-2/3 cup of sugar
-1 teaspoon of vanilla extract
-1 teaspoon of grated lemon
-a pinch of salt
-1 cup of all purpose flour
-10 tablespoons of butter (or coconut and canola oil)
-1 teaspoon of apple cider vinegar
I love using apple cider vinegar whenever i'm baking. It always makes everything soft and moist.
DIRECTIONS:
-Pre-heat oven at 375 degrees Fahrenheit
-Make sure to put non-stick spray on your Madeleine pan
-Using a stand mixer, beat eggs and sugar
-Beat in salt, vanilla, and grated lemon
-Add flour, mix until everything is combined
-Add your teaspoon of apple cider vinegar
-Add in a tablespoon at a time of butter, until well combined
-Spoon 1 tablespoon of batter into each mold
- Bake for around 10 minutes, until puffed and edges are slightly browned
-Cool for 5 minutes and remove
-Make sure to add non-stick spray for every batch!
-You can dust with powdered sugar, if desired
-Enjoy!
