Homemade Cannoli

Cannolis are absolutely one of my favorite Italian pastries. A good cannoli can be quite hard to find, but this recipe will help you! You will need small rods for making the shell.. Now, let's get to making some cannolis!

You will need
-cannoli shell rods (you can find some on amazon)
-a circle cookie cutter, or a 1 cup measuring cup
CANNOLI SHELL INGREDIENTS:
- 2 cups of flour
-1 teaspoon of cinnamon
-2 tablespoon of coconut oil (canola oil will do)
-1 tablespoon of sugar
-1/2 teaspoon of salt
-1/2 to 3/4 cup of white wine
-1 egg white
-oil for frying
CANNOLI FILLING INGREDIENTS:
-16 oz. milk ricotta
-8 oz. mascarpone cheese
-1 teaspoon of vanilla extract
-powdered sugar for sprinkling
-chocolate chips for garnish
Let's get to making this delicacy!
DIRECTIONS:
-First make the cannoli dough. Combine the flour, cinnamon, coconut oil, sugar, and salt in a standard mixer and mix until combined. It will feel a little like fine sand
-While mixing, add in the wine. Add in about a tablespoon at a time until it is well combined
-Remove the dough, wrap it with plastic wrap and refrigerate for about two hours. I let mine refrigerate overnight
-After the dough has rested, put dough on a floured surface and cut in half
-Take a rolling pin, and flour that a bit, and roll out the dough. Cut as many circles as possible
-Take your tubes, and put the dough around and form the cannoli shell
-Take egg whites and smear it to seal it
-Once you have all your shells, put enough oil in a pan and set it up to medium heat
-Take some tongs, and gently place them into the hot oil. Allow all sides to brown nicely


-When they all look nicely golden, remove them and set them on a plate with a few paper towels to absorb remaining oil
-Allow them to cool down
-Lets make the filling now, shall we? Mix ricotta, mascarpone, powdered sugar, and vanilla extract. I also added some lemon zest, that is up to you if you would like to add some
-Take a piping bag or you can use a ziplock and cut a hole in a corner
-Starting at one end, fill halfway, and start at the other end and fill in remaining space
-Take chocolate chips, and add them at the end of your cannoli
-Place cannoli on a serving plate, and top with powdered sugar and you're ready to serve and enjoy!
