Mushroom and Zucchini Chicken with Quinoa

Hello everyone! Yesterday evening I tried an amazing new dish. Your entire family will soon come into the kitchen to find out what you're making, because the smell is so savory! Lightly sautéed mushroom and zucchini with delicious chicken in a soy ginger and garlic sauce with some balsamic vinegar. Someone say yum! If you'd like to learn how to make this recipe (I mean, why wouldn't you?!) Continue below and i'll tell you how!

 

As always, prepare all ingredients together. You will need as follows:

-4 cups of quinoa

-8 cups of vegetable or chicken broth

- 4 pieces of chicken breast

- 3 tablespoons of cornstarch

-a bit of canola oil

-1 tablespoon of sesame oil

-1 medium zucchini

-4 cups of mushrooms

-1/4 cup of soy sauce

-2 tablespoons of balsamic vinegar

-6 cloves of garlic, minced

-3 tablespoons of ginger, minced

- salt to taste

-pepper to taste

-dash of turmeric

 

HOW TO COOK QUINOA

DIRECTIONS:

When cooking quinoa, I find it is best to have a saucepan. It absorbs the liquid much better, which results to nice and fluffy quinoa! Quinoa absorbs water like a sponge, so be generous with the amount of liquid.

*Add uncooked quinoa to a sauce pan and add broth

*Bring it to a boil and then lower it down to a simmer for around 20 minutes or there is no more broth

*Make sure to check on it often, it might need more broth!

*When quinoa is finished cooking, it should look fluffy.

MUSHROOM AND ZUCCHINI CHICKEN

DIRECTIONS:

* Take your chicken breast and cut into bite size pieces, but not too small! Toss the chicken with some cornstarch

*Heat some canola oil and sesame oil in a pan

*Cook the chicken, add some salt, pepper, and a dash of turmeric (the health benefits are amazing!)

*Remove chicken from pan, add a little more canola oil and add mushrooms and zucchini until they softly brown

*Add in ginger and garlic and stir

*Cook for a few more minutes until veggies soften

*Add the chicken back into the pan

*Add soy sauce and balsamic vinegar and stir

*Take a plate, and add quinoa, top it with your now made mushroom zucchini chicken and sauce!

*Enjoy!
